Easy Chicken Fingers

Ingredients

  • ½ cup flour
  • ½ teaspoon salt plus more to season the sauce
  • freshly ground black pepper
  • 2 eggs lightly beaten
  • 1 cup Panko breadcrumbs
  • 1 cup grated Parmesan cheese
  • 4 skinless boneless chicken breasts

Instructions

  1. Pre-heat the oven to 375˚ F.
  2. Cut the chicken breasts into long “fingers” (or nugget-sized pieces if preferred).
  3. Place the flour, salt and pepper in one shallow dish. Place the eggs in a second shallow dish. Combine the breadcrumbs and Parmesan cheese in a third and final shallow dish. Lightly dredge each chicken breast in the flour, then dip into the egg mixture, and then coat the chicken breasts with the breadcrumb mixture. Place the coated chicken breasts on a rack on top of a cookie sheet pan, or a fat-away mat on top of a baking board.
  4. Transfer the chicken fingers to the oven and bake for 30 minutes, flipping once half way through baking.

Air Fryer Parmesan Chicken Fingers

Ingredients

  • ½ cup flour
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • freshly ground black pepper
  • 2 eggs beaten
  • ¾ cup seasoned panko breadcrumbs
  • ¾ cup grated Parmesan cheese
  • 8 chicken tenders about 1 pound (or 2 to 3 boneless chicken breasts, cut into strips)
  • vegetable oil
  • marinara sauce

Instructions

  1. Set up a dredging station. Combine the flour, garlic powder, salt and pepper in a shallow dish. Place the beaten eggs in second shallow dish, and combine the panko breadcrumbs and Parmesan cheese in a third shallow dish.
  2. Dredge the chicken tenders in the flour mixture. Then dip them into the egg, and finally place the chicken in the breadcrumb mixture. Press the coating onto both sides of the chicken tenders. Place the coated chicken tenders on a baking sheet until they are all coated. Spray both sides of the chicken fingers with vegetable oil.
  3. Pre-heat the air fryer to 360ºF.
  4. Air-fry the chicken fingers in two batches. Transfer half the chicken fingers to the air fryer basket and air-fry for 9 minutes, turning the chicken over half way through the cooking time. When the second batch of chicken fingers has finished cooking, return the first batch to the air fryer with the second batch and air-fry for one minute to heat everything through.
  5. Serve immediately with marinara sauce, ketchup, honey-mustard or your favorite dipping sauce.

  2. I have an oven air fryer, not a pot-like air fryer. I have made this recipe in the oven, but how can I adapt it to an oven air fryer? And do all air fryer recipes work the same whether you are using the pot-like fryer or an oven fryer?

    1. All the air fryer recipes on the website can be made in a circular air fryer or an air fryer oven. The times and temps will stay the same, but like regular ovens, all air fryers are different so just keep your eye on your food the first time you are air frying a new type of food to check on the doneness.
