Turkey Waldorf Salad Pita

Ingredients
- ¼ cup light mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon apple cider vinegar
- 1 tablespoon fresh chopped parsley
- ½ teaspoon celery seed
- 1½ cups diced cooked turkey breast
- 1 stalk celery finely diced
- 1 Granny Smith apple diced
- ½ cup red grapes halved
- ½ cup toasted walnuts chopped
- salt and freshly ground black pepper
- 1 pita bread with pocket
- green leaf lettuce
- 1 roma tomato sliced
Instructions
- Combine the mayo, Dijon mustard, apple cider vinegar, parsley and celery seed in a medium-sized bowl. Add the diced turkey, celery, Granny Smith apple, red grapes and walnuts, and mix well. Season with salt and freshly ground black pepper to taste. Chill until ready to serve.
- Cut the pita bread in half. Gently open the “pocket” of the bread and fill each half with some green leaf lettuce and slices of roma tomatoes. Spoon the Turkey Waldorf salad on top of tomato in each half and enjoy!
