Combine the mayo, Dijon mustard, apple cider vinegar, parsley and celery seed in a medium-sized bowl. Add the diced turkey, celery, Granny Smith apple, red grapes and walnuts, and mix well. Season with salt and freshly ground black pepper to taste. Chill until ready to serve.
