Mojito
There are just five ingredients in this delicious mojito - lime, mint, sugar, rum and water. All these ingredients are easy to find in your pantry or grocery store. Mix it up, sit back and close your eyes and you'll be instantly transported to a different world.

Ingredients
Simple Syrup
- 1 cup sugar Demerara sugar is nice
- 1 cup water
Mojito
- ½ ounce simple syrup
- ¾ ounce freshly squeezed lime juice about 1 lime
- 10 fresh mint leaves
- 2 ounces light rum
- ice
- 1 to 2 ounces mineral water or soda water
Instructions
- Make the simple syrup ahead of time. Simply combine the water and sugar in a saucepan and bring to a simmer to dissolve the sugar. Cool completely and store in the refrigerator.
- To make the mojito, combine the simple syrup, lime juice, mint leaves and light rum in a cocktail shaker. Fill with ice and shake hard for 10 seconds or so.
- Strain the cocktail into a collins glass through a fine strainer and top with the mineral water. Garnish with a sprig of mint and a slice of lime.

I loved this refreshing drink in Mexico and couldn’t get mine to taste as good here in Canada. Turns out I was using a tough-leafed mint that I’d got from a friend’s garden. It had a spearmint flavour. Then I discovered mojito mint, which has a citrus flavour and softer leaves. Now my mojitos are delicious! Thanks for the recipe, BJC. This one and your sangria recipe are summer favourites!

Where can I buy Mojito Mint?
Hi Mary. I don’t know where you could find mojito mint near you, but I know you can get it from Etsy. I just use any mint, specifically spearmint when making mojitos.

How do you make Limoncello, or Lemon Syrup?

Hi Elizabeth. Limoncello is made with vodka or a high proof grain alcohol and lemon zest, steeped for several days and then sweetened with simple syrup. Lemon syrup is made by substituting lemon juice for the water in a simple syrup. You can also add lemon zest to the lemon syrup as it cools. Both have the lemon zest strained out before storing.
