You can't properly enjoy a Greek dinner without a little Tzatziki to go alongside. This simple, no-bake, throw together sauce is super easy. Your only decision is how much garlic you want to add - a little goes a long way!

Ingredients
  • 1 cup grated English cucumber about ½ to ¾ of a cucumber
  • 1 clove garlic grated or finely minced
  • 1 cup plain Greek yogurt
  • juice of half a lemon
  • 1 to 2 tablespoons olive oil
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh parsley
  • ½ teaspoon salt
  • freshly ground black pepper
Instructions
  1. Place the grated cucumber on a clean kitchen towel and twist to squeeze the out the excess liquid. Combine the cucumber, Greek yogurt, lemon juice, olive oil, chopped dill and parsley in a bowl and season with salt and freshly ground black pepper.
  2. Chill the tzatziki sauce until you are ready to serve.
  3. Serve with chicken souvlaki, fresh vegetables or pita bread.
