This quick and easy salad gives coleslaw an Asian flavor with garlic, ginger, Napa cabbage and edamame beans.

Ingredients
  • ½ head napa cabbage thinly sliced (about 1½ to 2 cups)
  • 2 carrots julienned or shredded (about 1 cup)
  • 1 cup edamame beans fresh or frozen and thawed
  • 1 red bell pepper thinly sliced
  • 2 scallion sliced
  • 1 handful toasted salted peanuts
  • fresh mint or cilantro leaves
  • toasted sesame seeds optional
Dressing:
  • ¼ cup rice wine vinegar
  • 1 tablespoons sugar
  • OR
  • ¼ cup seasoned rice vinegar
  • ½ clove garlic grated or very finely minced
  • 1 tablespoon fresh ginger grated or very finely minced
  • teaspoon crushed red pepper flakes
  • 1 tablespoon soy sauce
  • 3 tablespoons vegetable oil
  • ½ teaspoons toasted sesame oil
Instructions
  1. Combine all the vegetables in a large bowl.
  2. Make the dressing. If using regular rice wine vinegar (as opposed to seasoned rice vinegar), start by combining the vinegar and sugar in a bowl, stirring to dissolve the sugar. Add all the remaining ingredients and mix well.
  3. Toss the vegetables with the dressing and add the peanuts, fresh herbs and toasted sesame seeds (if using).
