Dressing:

Combine all the vegetables in a large bowl.

Make the dressing. If using regular rice wine vinegar (as opposed to seasoned rice vinegar), start by combining the vinegar and sugar in a bowl, stirring to dissolve the sugar. Add all the remaining ingredients and mix well.

Toss the vegetables with the dressing and add the peanuts, fresh herbs and toasted sesame seeds (if using).
