14-ounce can crushed tomatoes

Place the olive oil, garlic and red pepper flakes in a straight-sided sauté pan and turn the heat to medium. When the garlic is aromatic, but not browning, add the oregano and basil, stirring for a minute. Add the tomato paste and cook, stirring for 2 to 3 minutes. Add the crushed tomatoes and bring the mixture to a simmer.

Lower the heat and simmer for 10 to 20 minutes, until the sauce thickens slightly and the flavors have blended nicely. Season to taste with salt and freshly ground black pepper. If the sauce needs a little sweetening and a little depth, add aged balsamic vinegar to taste.

Cool to at least room temperature before topping your pizza dough.
