Pan Roasted Salmon is one of the most delicious ways to prepare salmon. It gets a nice crust on the seared side and remains moist inside. On top of all that, it is beautiful to present on a plate as well. Just make sure you start with the best quality salmon you can find.

Ingredients
25-ounce salmon fillets
salt and freshly ground black pepperto taste
olive oil
lemon
fresh herbschives, tarragon, parsley, thyme
Instructions
Pre-heat the oven to 400˚ F.
Pre-heat a non-stick skillet over medium-high heat and season the salmon with salt and pepper. Add a little olive oil to the skillet and then place the salmon in the pan, presentation side down. Sear for 2 minutes on each side and then transfer the skillet to the oven for 6 or 7 minutes, or until firm to the touch.
Remove the salmon to a plate and serve with a squeeze of lemon and your choice of fresh herbs.
