Ingredients
1cupnatural sunbutter
1egg
½cupcoconut sugar
2tablespoonspure maple syrup
1teaspoonpure vanilla extract
3tablespoonscoconut flour
½teaspoonground cinnamon
½teaspoonbaking soda
¼teaspoonsalt
Instructions
Pre-heat the oven to 350°F.
Cream the sunbutter and coconut sugar together. Add the maple syrup, egg and vanilla extract and mix to combine. In a small bowl combine the coconut flour, cinnamon, baking soda and salt. Add the dry ingredients to the sunbutter mixture and stir until combined.
Roll 2 tablespoons of dough at a time into balls and place them on a baking sheet 2-inches apart. Flatten the balls slightly with a fork making a crisscross pattern on top. Transfer the baking sheet to the oven.
Bake in the center of the oven at 350°F for 8-10 minutes.
Allow the cookies to cool on the baking sheet for 5 minutes and then transfer them to a cooking rack.
Store in an airtight container.
