One of my favorite nibbles that falls in the Paleo diet (Whole 30 is really a very strict Paleo diet) are these Paleo Power Bites. Honestly, this is something that I feel happy sharing with friends who are not taking on the Paleo lifestyle because they are so tasty.

Ingredients
1cupwalnuts
1cuppecans
3 to 4tablespoonschia or flax seeds
1cupshredded unsweetened coconut
2cupssoft Medjool datespitted
2heaping tablespoons coconut oil
1teaspoonsea salt
1teaspoonvanilla extract
Instructions
In a large food processor, process the walnuts, pecans, chia seeds and coconut until crumbly. Add the dates, coconut oil, vanilla and salt and process again until a sticky, uniform batter is formed.
Scoop the dough by heaping tablespoons and squeeze each portion between your hands to form balls. Arrange the balls on a baking sheet lined with parchment paper, then place in the freezer to set for at least an hour before serving.
Store the balls in a sealed container in the fridge for up to a week, or in the freezer for an even longer shelf life.
