Heat a 2- to 3-quart saucepan over medium heat. Melt the butter

Add the flour and stir, cooking for 2 minutes.

Whisk in the milk, stirring constantly to avoid lumps. Stirring regularly, bring the sauce to a boil.

Lower the heat and simmer until it has thickened for a minute or two. Add a pinch of grated nutmeg. Season to taste with salt and freshly ground white pepper.
This is your base white cream sauce. Stir in some fresh herbs, grated cheese or other seasonings to turn this into various sauces.
