Looking for the perfect baked potato? Look no further. Rubbing the skin with olive oil, seasoning with salt and pepper and baking in an air fryer gives you a potato with crispy delicious skin and a fluffy interior just waiting for all your toppings.

Ingredients
  • 4 medium russet potatoes about 9 to 10 ounces each
  • 1 to 2 tablespoons olive oil
  • salt and coarsely ground black pepper
For Serving:
  • butter
  • sour cream
  • chopped fresh chives or scallions
  • chopped cooked bacon
  • Cheddar cheese grated
Instructions
  1. Pre-heat the air fryer to 400°F.
  2. Rub olive oil all over the potatoes and season them generously with salt and freshly ground black pepper. Pierce all sides of the potatoes several times with the tines of a fork.
  3. Air-fry for 40 minutes, turning the potatoes over halfway through the cooking time.
  4. Serve the potatoes, split open with your favorite toppings.
Recipe Notes

If you in a hurry and want to save a few minutes….slice the potatoes in half lengthwise. Rub the olive oil on the potato halves and season with salt and pepper. Place the potatoes cut side down in the air fryer. Air-fry at 400°F for 20 minutes. Flip potatoes over and air fry for an additional 5 to 10 minutes.
