This Winter Fruit Salad uses fruit that is seasonal and a little uncommon in most fruit salads. Pears, starfruit, pomegranate, lychees and mandarins not only look beautiful together, but taste delicious too - especially with the sweet cinnamon dressing that goes on top.

Prepare the fruit. Slice the pears into thin wedges; peel the clementines and slice them ½-inch thick; slice the starfuit into ½-inch thick slices; and cut the lychees in half.

Whisk the honey, lime juice, cinnamon and two tablespoons of the lychee syrup together in a small bowl or measuring cup.

Arrange all the pears, starfuit and clementines on a large platter or in a wide shallow bowl. Scatter the pomegranate seeds all over and add the lychees. Drizzle the dressing evenly over the fruit. Let the salad sit for at least 10 to 15 minutes before serving. Cut the mint leaves into ribbons and sprinkle it on top of the fruit just before serving.
