Ingredients
Greek Stuffed Sweet Potatoes:
  • 1 cup diced cucumbers
  • ⅓ cup halved Kalamata olives
  • ½ cup chopped tomatoes
  • ¼ cup tzatziki
  • ¼ cup crumbled feta cheese
  • Fresh chopped oregano
Mexican Stuffed Sweet Potatoes:
  • ½ cup black beans
  • 1 Jalapeño minced
  • ½ cup guacamole
  • ⅓ cup crumbled queso fresco
BBQ Chicken Stuffed Sweet Potatoes:
  • ½ cup grated Cheddar cheese
  • 1½ cups BBQ pulled chicken warmed
  • ¼ cup sour cream
  • 2 scallions chopped
Instructions
  1. Cut baked potato open and sprinkle some shredded cheese on top. Return the potatoes to the air fryer and air-fry at 350°F for 2 minutes. Fill the potatoes with the pulled chicken and top with sour cream and scallions.
