Brownie Brittle with Toffee Bits

This is a delicious snack-able treat for any chocolate lover. It has crunchy outer edges but is tender in the center so people can choose the type of brownie they like. Top it with toffee bits, chopped nuts, chunks of caramel or even crushed candy canes.

Ingredients
  • 4 ounces unsalted butter plus more for greasing pan
  • 8 ounces semi-sweet or bittersweet chocolate
  • 3 eggs
  • 1 cup granulated sugar
  • ½ teaspoon salt
  • 1 cup all-purpose flour
  • 10 ounces dark chocolate chips
  • 4 1.4-ounce Skor® or Heath® Candy Bars, chopped in pieces
  • OR
  • cup candy bits like Butterfinger® pieces
Instructions
  1. Pre heat the oven to 300°F. Line a 17-inch x 13-inch baking sheet pan with parchment paper, extending up the sides to help lift the brittle out of the pan. Grease the corners of the pan to help the parchment paper stick to the pan.
  2. Melt the butter and chocolate together in a double boiler, or carefully in the microwave, stirring at regular intervals. Set the mixture aside to cool.
  3. Beat the eggs and sugar together in a stand mixer, or with an electric hand mixer, until it reaches the ribbon stage (the eggs fall from the beater in one solid line like a ribbon). Stir in the salt and the cooled chocolate mixture.
  4. Stir the flour into the mixture just until no streaks of flour can be seen. Try not to over-mix at this stage. Fold in the dark chocolate chips.
  5. Using a spatula spread the batter out evenly in a thin layer on the parchment paper, extending the batter all the way to the edge of the pan. (This is easiest if you only spread the batter in one direction at a time, holding the parchment as you spread away from you.)
  6. Bake in the oven for 40 minutes. Sprinkle the chopped Skor® or candy pieces over the brownie brittle, slightly press into brownies with a spatula and bake for an additional 5 minutes.

  7. Transfer the brownie brittle to a cooling rack and let it cool completely on the pan.

  8. Break the brownie brittle into pieces or cut it into triangles with a pizza cutter. Store in an airtight container for up to 2 weeks.
