Heat a large sauté pan or skillet over medium-high heat. Add the olive oil and butter and place the chicken in the pan. Reduce the heat to medium and brown the chicken well on both sides – about 4 to 5 minutes per side. Be patient and do not flip the chicken until it releases easily from pan. Transfer the browned chicken to a platter, loosely tent with foil and place it in a 170°F oven to keep warm.
