This super quick and easy corn dip is delicious at the end of the summer when fresh corn is in peak season. Grab some chips and get dipping!

Ingredients
  • 4 ears corn husked
  • ½ cup Greek yogurt
  • 2 tablespoons mayonnaise
  • ½ cup grated Cheddar or red Leicester cheese
  • 1 tablespoon olive oil
  • 2 tablespoons lime juice
  • 1 clove garlic minced
  • ½ teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • 1 Jalapeño pepper minced
  • ¼ cup minced scallion
  • Salt and freshly ground black pepper
  • 2 tablespoons chopped fresh parsley
  • Hot sauce chili powder or smoked paprika for garnish
Instructions
  1. Pre-heat an outdoor or indoor electric grill and grill two of the ears of corn until lightly browned. Cut the kernels off all four ears. (If you don’t have the option of grilling the corn, just use the fresh corn kernels.)
  2. Combine the Greek yogurt, mayonnaise, Cheddar cheese, olive oil, lime juice, garlic, paprika, chili powder and cumin in a bowl and stir well.
  3. Add the corn kernels, the Jalapeño pepper, scallions and stir well. Season to taste with salt and pepper and stir in the parsley.
  4. Transfer the mixture to a serving bowl and garnish with a few dashes of hot sauce, some chili powder or smoked paprika. Serve with chips, crackers or vegetables.
