If you like peanut butter... you will LOVE this peanut butter swirl ice cream. It has swirls of peanut butter, but the base of the ice cream is also peanut butter. That's double what you love!

Ingredients
  • cups creamy peanut butter divided
  • 3 cups heavy cream
  • 1 cup whole milk
  • ½ cup granulated sugar
  • ½ cup corn syrup
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
Instructions
  1. Combine 1 cup of the peanut butter, heavy cream, milk, sugar, corn syrup and salt in a medium saucepan. Bring the mixture to a simmer, whisking regularly to dissolve the sugar. Remove the pan from the heat and stir in the vanilla extract.
  2. Refrigerate overnight or chill the mixture over an ice bath for 2 hours.
  3. In two batches, transfer the mixture to a pre-chilled ice cream maker and churn into ice cream. When the ice cream is just about set up, soften ¼ cup of the remaining peanut butter in a saucepan or microwave just until it is thin and pourable. Let it cool for a few minutes. Turn the first batch of ice cream out into a container and drizzle with half the peanut butter. Use a knife or spatula to swirl the peanut butter into the ice cream. Hold the ice cream in the freezer and repeat with the second batch of ice cream. Freeze overnight for the best scooping texture.
