This might be my favorite turkey sandwich ever. It's a great way to use up leftover turkey breast, but it makes roasting a small turkey breast worthwhile all on its own.

Ingredients
  • 2 ciabatta bread rolls sliced in half OR 4 slices sourdough bread
  • Olive oil
  • ¼ cup chipotle mayo
  • 6 ounces sliced roast turkey
  • 1 pear sliced
  • 1 Jalapeño pepper
  • Handful of arugula
  • 4 ounces sliced sharp Cheddar cheese about 4 to 6 slices
Instructions
  1. Brush the cut sides of the ciabatta rolls with a little olive oil and toast in your air fryer or in a skillet on the stovetop until browned. Alternately, brush one side of your sourdough slices with oil and toast in the air fryer or on the stovetop in a skillet.
  2. Spread the chipotle mayo on both halves of the bread rolls or on all the slices of bread. Layer the thinly sliced roast turkey, pear, sliced Jalapeño and Cheddar cheese on two of the bread slices or on the bottom of the ciabatta rolls. Transfer the stacks into the air fryer and air-fry at 400˚F for 2 minutes to melt the cheese (or pop them under the broiler to the same effect). Then top with the arugula and the other half of the bread roll and press firmly down. Slice in half and serve.
