Shakshuka is a meal that you can enjoy for breakfast, lunch OR dinner. It's also a perfect brunch entrée and it's simple and quick to prepare.

Ingredients
  • 1 tablespoon olive oil
  • 1 small onion finely chopped
  • 1 cup chopped roasted red pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • pinch crushed red pepper flakes
  • 1 28-ounce can tomatoes, rough chopped
  • salt and freshly ground black pepper
  • ½ cup crumbled feta cheese or grated Cheddar cheese
  • 4 large eggs or as many as you’d like and can fit
  • fresh parsley chopped
Instructions
  1. Start by making the tomato sauce. Pre-heat a sauté pan on medium heat on the stovetop. Add the olive oil and the onion to the pan and sauté until it softens – about 5 minutes. Add the roasted red pepper, cumin, paprika and pepper flakes for a minute or two and then pour in the tomatoes and bring the mixture to a simmer. Season with salt and simmer for 10 minutes.
  2. Meanwhile, pre-heat the oven to 400ºF.
  3. Sprinkle the cheese onto the sauce and then crack the eggs into the pan on top of the sauce in four separate areas. Transfer the pan to the oven and bake until the eggs are just set – about 10 to 12 minutes, depending on how you like your yolks cooked.
  4. Sprinkle the chopped parsley on and serve warm with a side salad and a piece of crusty toasted bread. Enjoy.
