Slow-roasted tomatoes is one of my go-to appetizer recipes. Simply serve them warm with slices of baguette and a bowl of olives and you're all set. They are also delicious tossed into a pasta or a salad, or even as a pizza topping. Make a big batch and keep them on hand - you never know when you'll need them! Ingredients
  • 4 Roma tomatoes
  • 1 tablespoon olive oil
  • salt and freshly ground black pepper
  • 1 clove garlic minced
  • ½ teaspoon dried thyme
Instructions
  1. Pre-heat the air fryer to 390º F.
  2. Cut the tomatoes in half and scoop out the seeds and any pithy parts with your fingers. Place the tomatoes in a bowl and toss with the olive oil, salt, pepper, garlic and thyme.
  3. Transfer the tomatoes to the air fryer, cut side up. Air-fry for 15 minutes at 390º F. The edges should just start to brown. Let the tomatoes cool to an edible temperature for a few minutes and then use in pastas, on top of crostini, or as an accompaniment to any poultry, meat or fish.
