This citrus herb butter is a quick and easy compound butter. You can make it by hand with very soft butter, or use your processor to whip it up in seconds. A simple slice on a steak or a piece of fish is the easiest sauce to prepare.

Ingredients
  • ½ pound unsalted butter room temperature
  • 1 tablespoon lemon zest
  • 1 tablespoon orange zest
  • 1 tablespoon lime zest
  • 2 tablespoons chopped fresh herbs parsley, cilantro, tarragon
  • 1 tablespoon lemon juice
  • ¼ teaspoon salt
Instructions
  1. Cut the butter into chunks and place it into a food processor bowl.
  2. Add the zests, herbs and juice and process until smooth.
  3. Taste and season.
  4. Transfer the butter to a piece of plastic wrap and shape it roughly into a log. Roll the butter in the plastic wrap and store in the refrigerator or freezer.
